Andhra special stuffed brinjal is otherwise known as Gutti Vankaya. This dish can be made either with small purple brinjals or with the small round green eggplants.

Ingredients:
1 dozen Brinjal
A few Curry leaves
A few cloves of Garlic
Salt
Chilli powder
1 tbsp Ghee –
3 tbsp Andhra Masala powder

NOTE: Make sure that the brinjals are absolutely fresh, shiny and tender (seeds shouldn’t be black)
Well, stuffed brinjal curry can be made with a variety of stuffing. But today, we will show you a simple method to make this recipe.
Mix salt and chili powder and rub it into the brinjal and let it sit for about 5 minutes.
Pour 2 tbsp oil into a wide pan, and place the brinjal one by one into it and let it cook for about 2 minutes.
Toss it around and let it cook for another 2 minutes.
Mix the Andhra Masala Powder with ghee, and stuff it into the brinjal. Add a few curry leaves and garlic cloves and the stuffed brinjals and cook it in medium steam for 5 to 10 minutes.
NOTE: If the brinjals are tender then no need to use a pressure cooker. The brinjals will cook well on steam in a cooking vessel.
